Whether for a holiday or Sunday dinner, this mashed cauliflower is a delicious low-carb alternative to potatoes.
With Thanksgiving at the end of the month and Christmas exactly one month after that, we are ringing in the season of carbs! For my mom and for many southerners like her, the ultimate carb temptation this time of year is mashed potatoes, which belongs on the holiday table.
Unfortunately, the first time I tried mashed cauliflower, it had little resemblance to mashed potatoes. It was just to...cauliflower-y (totally a word). I think I have finally cracked the code on how to make a good cauliflower mash. When my husband tasted this recipe, he said that he could barely taste the cauliflower at all!
Ingredients:
Cauliflower
Sour Cream
Onion
Garlic
Green Onion
Onion Powder
Salt
Pepper
How to Make Cauliflower Mash:
Start off by steaming your cauliflower. I steam it for 5 minutes in my Instant Pot or about 15 minutes on the stove. The longer you steam it, the smoother the final product will be.
Set the cauliflower on a dishtowel to dry. Allowing the extra moisture dry off the cauliflower will provide you with a finished product more identical to mashed potatoes.
Add onions and garlic to a pan preheated with oil and sauté on medium until the onions begin to turn brown.
Next, you will need to blend the cauliflower to create a mashed potato consistency. I have found that the smoother the cauliflower is blended, you will run into fewer pockets of pure cauliflower flavor. I used an immersion blender for this step, but you can also use a food processor or blender.
Blend the onion mixture into the cauliflower.
Add the sour cream and onion powder and mix by hand, making sure that the sour cream is throughly mixed in.
Finally, stir in some green onion for a fresh onion kick and for some color and enjoy! My husband loved how the texture turned out in this recipe and it was close to mashed potatoes.
Sour Cream and Onion Mashed Cauliflower:
1 head of cauliflower
¼ cup sourcream
½ an onion, minced 95g
4 cloves of garlic, minced
1 tbsp olive oil
1 tsp salt
1 tsp onion powder
Pepper to taste
¼ cup green onions
Steam Cauliflower in an Instantpot for 5 minutes or on the stovetop for 15 minutes.
Layout steamed cauliflower on a dishtowel to dry.
In a medium pan, saute the onions and garlic in olive oil until just browned.
Using an immersion blender or a food processor, blend the Caluflower with the onion powder until smooth
Add in the onion mixture and sour cream and mix until smooth
Fold in the green onions until just combined.
