Slow Cooker Stuffed Pepper Soup

A warming meal that you can set and forget!


It is still pretty cold here in the mountains of Arizona. Cold weather always makes me crave soup. Growing up, I didn't eat very much bell pepper since my mom and sister are very allergic. However, I married a man who loves bell peppers!


While this recipe is neither Keto or Paleo, it is a delicious treat on a cold day when you don't feel like spending a lot of time cooking! you can easily make this recipe Keto and Paleo by removing the rice and adding cauliflower rice instead!


Ingredients:



  • Ground Beef

  • Bell Peppers

  • Onion

  • Garlic

  • Chicken Broth

  • Water

  • Rice

  • Salt and Pepper

The Process:



Start the soup by browning the meat in a skillet over medium heat and season with salt and pepper.



Once the meat has started to brown, add the onions and bell peppers. Cook the onions and peppers until they are soft. Add the garlic and cook for about a minute until the garlic becomes fragrant.



Once the meat is mostly browned, add the meat and vegetables to the slow cooker.



Pour the chicken broth and water into the slow cooker. It is important to make sure that there is plenty of liquid in the soup, as the rice will absorb a fair amount of the liquid in the cooking process. Therefore, for every cup of rice in your soup, you will need two cups of liquid beyond what you would typically add to your soup.



Add the rice to slow cooker and cook on high heat for 3 hours or low heat for 8 hours. Adjust the salt and pepper amounts to suit your taste and serve. I like to top this with cheese after serving.



My favorite part of this recipe is how flexible it is. you can adjust the seasoning to your preferences or switch out the rice for barley or for a low carb option like cauliflower or zucchini.


Slow Cooker Stuffed Pepper Soup:


  • 1 lb ground beef

  • 2 bell peppers

  • 1 onion

  • 3 cloves of garlic

  • 32 oz of chicken broth

  • 2 cups water

  • 1 cup rice

  • Salt and pepper to taste


In a large skillet, season and brown the meat and vegetables over medium heat.


Once the vegetables have softened and most of the meat is browned, add the garlic and cook until fragrant. Add the meat and vegetables into the slow cooker.


Pour the broth and water over the meat mixture and stir in the rice.


Set the slow cooker to high and cook for 3 hours, or for 8 on low. Adjust the seasoning with salt and pepper and serve!
