Grandma Billie's Old-Fashioned Pancakes

Growing up, nothing said “good morning” more than pancakes for breakfast. Paired with sausage or bacon, I lived for mornings when I would wake up to smell the warm, fluffy breakfast treat. The secret recipe that we used while I was growing up was used on the family ranch in California.


The recipe that I grew up with was a literal panCAKE. They tasted just like a cake you would bake in the oven, but were cooked on the stovetop. I have reworked this recipe recently for my little sister who is allergic to eggs and took the chance to cut back on the sugar.




To make these pancakes, you will need:

  • Flour

  • Baking Powder

  • Salt

  • Milk

  • Yogurt

  • Butter

  • Honey

  • Vanilla




Making the pancakes:


Whisk together all of the dry ingredients into a large bowl. Using a whisk to mix them together will help put air into the flour mixture, creating a fluffier final product.



In a small bowl, mix the wet ingredients. I like to warm the milk and butter together so that the butter doesn’t curdle (clump together when adding a cold ingredient such as the yogurt.) it also helps to let the yogurt sit on the counter for a few minutes to warm to room temp before mixing.



Whisk the wet ingredients into the dry ingredients. Do not over mix. Otherwise, you will activate the glutens in your batter, creating a chewy pancake.



Pour approximately ¼ cup of batter into a preheated skillet. Once bubbles and do not collapse on themselves when popped, flip the pancake. Cook until the other side is golden brown.



Serve with butter, fresh fruit, and your favorite syrup.


Leftovers can be frozen and reheated for a taste of the weekend mid week!


Tips for making Grandma Billie’s Old Fashioned Pancakes:


  • use butter for the oil. I have made these with a variety of different oils, including coconut oil. However, butter creates a distinct, old fashioned flavor

  • use honey as a sweetener. I know it doesn't sound like it should make much of a difference, but trust me it does! If you aren’t the biggest fan of the taste of honey, then use clover honey which has a lighter taste or just go with your favorite sweetener.

  • If using a cast iron skillet or griddle (which I highly recommend especially if your cast iron is well seasoned) make sure that the skillet is thoroughly heated. A properly preheated cast iron skillet will provide a nice, even heat.

  • To get nice, round pancakes, pour the batter in a steady stream into the center of the pancake.

  • Make sure your skillet is well oiled. This will prevent your beautiful pancakes from sticking.


 

Grandma Billie's Old-Fashioned Pancakes


Makes 5 Servings; Serving size 4 pancakes ~ 265 Calories


Ingredients:

  • 2 cups Flour

  • 4 1/2 tsp Baking Powder

  • 1/4 tsp Salt

  • 1/4 cup Butter

  • 2 Tbsp Honey

  • 1 tsp Vanilla

  • 1/2 cup Greek Yogurt

  • 2 Cups Milk


1.Whisk together flour, baking powder, and salt in a large bowl until well combined.


2. Melt butter and let cool for a couple of minutes. In a small bowl, combine the melted butter, yogurt, honey and vanilla.


3. Melt a pat of butter in a skillet over medium high heat. Pour the batter by the 1/4 cup full into the pan. Cook until the edges of the pancake begin to dry and then flip. Allow the pancakes to finish cooking until golden brown.


4. Serve with your favorite syrup, fruit or other toppings!
